Taco Spiced Chickpeas

A great, healthy, and addictive snack! I am not a huge fan of the texture of legumes, but these chickpeas transform once roasted; they become nutty, crunchy, and addicting! 

Besides being an inexpensive and healthy snack, they could not be simpler to make. Loaded with fiber, zinc, folate, and protein, it’s a win-win for your hormones as well. You can use any spices you like or adjust the spice to your taste. This recipe features taco spices – for when your cravings call for Mexican, but your healthy meal plan doesn’t agree. But seriously, flavor possibilities are endless. If you don’t like tacos (wait, are there people who don’t like tacos? I digress), try curry, parmesan, or keep it simple with some sea salt and garlic powder.

Ingredients: 

  1. 2 cups Chickpeas (cooked)
  2. 2 tsp Extra Virgin Olive Oil
  3. 2 tsp Sea Salt & Black Pepper (to taste, optional)
  4. 2 tsp Taco Seasoning

Instructions: 

  1. Preheat the oven to 400ºF (205ºC) and line a baking sheet with parchment paper.
  2. Pat the chickpeas dry with a paper towel and transfer them to the prepared baking sheet. Drizzle with the oil and season with salt, pepper, and taco seasoning. Mix until the chickpeas are evenly coated.
  3. Bake in the oven for 25 to 28 minutes, tossing halfway through, or until the chickpeas reach your desired crispiness.
  4. Remove from the oven. Season with additional salt and pepper if needed. Let cool slightly and enjoy!

Ways to eat this snack:

Enjoy a handful of this snack on the go, or as a great midday snack to put some pep in your step. Create tacos with these chickpeas as a filling and drizzle some freshly squeezed lime juice to send your taste buds on a ride. Sprinkle some of these chickpeas on your favorite salad, pairing it with the healthy fats found in avocado and essential vitamins and minerals on a bed of vegetables.
