Ingredients:
- 1 small pineapple, peeled and cored
- 1 red bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- 8-10 cherry tomatoes
- Wooden skewers, soaked in water
For the marinade:
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Preheat the grill to medium-high heat.
- Cut the pineapple into chunks of approximately 1-inch size.
- In a bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, dried oregano, salt, and pepper to make the marinade.
- Thread the pineapple chunks, red bell pepper, zucchini slices, red onion chunks, and cherry tomatoes alternately onto the soaked wooden skewers.
- Place the skewers in a shallow dish and brush them with the marinade, ensuring they are evenly coated. Reserve some of the marinade for basting while grilling.
