Mediterranean Chicken in Creamy Ricotta Sauce

Mediterranean Chicken in Creamy Ricotta Sauce

With a lot of travel and work plans coming up, along with some new fitness goals I’ll share with you in the future, a high-protein diet has become a priority for me. Protein is essential for muscle repair, energy, and keeping you feeling full longer—perfect for busy schedules and staying on track with fitness goals. Once I found this dish, I knew I had to add it to my meal prep, and I just wanted to share it with you.

This dish is packed with protein, antioxidants, and fiber, making it a powerhouse meal to fuel your day. The chicken provides lean protein to support muscle growth, while ricotta cheese adds a creamy texture and boosts calcium for bone health. Mushrooms and roasted red peppers bring a dose of antioxidants and vitamins, while olive oil and lemon juice contribute healthy fats and vitamin C. Toss it onto a bed of spring mix, rice, quinoa, or any healthy carb of your choice, and you’ve got a balanced, nutrient-packed meal.

Ingredients:

  • 2 tbsps Extra Virgin Olive Oil
  • 2 tbsps Shallot (diced)
  • 0.5 lbs Chicken Breast (boneless, skinless, cubed)
  • 1 ½ cups Mushrooms (sliced)
  • Sea Salt & Black Pepper (to taste)
  • 1/2 cup Ricotta Cheese
  • 1 ½ Roasted Red Peppers
  • ½ Lemon (juiced)
  • 2 Garlic (clove)
  • 2 tbsps Parsley (for garnish)

Instructions:

  1. Heat the oil in a pan over medium heat. Add the shallot and sauté for two to three minutes, or until softened.
  2. Add the chicken and mushrooms to the pan. Season with salt and pepper, and cook for about 10 minutes, stirring occasionally, until browned.
  3. Meanwhile, combine the ricotta, roasted red peppers, lemon juice, and garlic in a blender. Blend until smooth, adding a splash of water if the sauce is too thick to blend.
  4. Pour the ricotta mixture into the pan. Stir well, then reduce the heat to medium-low. Simmer for five to seven minutes, allowing the flavors to meld and everything to cook through.
  5. Taste and adjust the seasoning as needed. Divide evenly between bowls and top with parsley. Enjoy!
