I’ve got some big goals over the next few months! If you follow me on social media, then you already know—I'm training for a bodybuilding competition in March. One key lesson I’ve learned is that consistency is everything, and the only way I can stay consistent is by simplifying my routine.
This recipe is a perfect example of how simple can still be delicious and nutritious. It’s quick to prepare, packed with balanced macronutrients, and full of flavor. Lean ground chicken delivers high-quality protein to support muscle recovery and keep you feeling full longer. Red onions and garlic add a rich, savory flavor while offering antioxidants and immune support. The frozen vegetable mix is a convenient source of healthy, complex carbs to keep your energy levels high. Creamy avocado brings in healthy fats to support nutrient absorption and heart health, and fresh cilantro finishes the dish with a burst of freshness. Tamari provides a bold, umami taste, while a touch of raw honey adds natural sweetness for balance.

Ingredients:
1/4 cup Red Onion (sliced)
2 Garlic (clove, minced)
340 grams Extra Lean Ground Chicken
1 1/2 cups Frozen Vegetable Mix
1 tbsp Raw Honey
¼ Avocado
2 tbsp Tamari
Sea Salt & Black Pepper (to taste)
2 tbsp Cilantro (chopped)
Instructions:
Heat a non-stick pan over medium heat. Add onion with a splash of water, stir, and cook for five minutes until soft.
Add the garlic and cook for one to two minutes. Add the chicken and cook for five minutes or until starting to brown, breaking it up as it cooks.
Stir in the vegetable mix and cook for 15 to 17 minutes or until tender and everything is cooked through.
Add honey and tamari, stir, and season with salt and pepper. Top with cilantro & avocado. Divide evenly between plates and enjoy!
