This week, I’m sharing one of my favorite vinaigrette recipes. This particular recipe is so simple, and the flavors are bright – this dressing can be used in so many ways to help boost the flavor and nutrition of any meal!
Limes are loaded with vitamin C and antioxidants. Limes help boost your immunity, reduce heart disease risk factors, prevent kidney stones, aid iron absorption, and promote healthy skin.
Cilantro is an incredible source of vitamins and minerals, but it really packs a punch in the antioxidant department. The antioxidants found in cilantro have been shown to help fight cancer, reduces pain and inflammation, has anti-fungal properties, and may help protect skin from UV damage.
Cilantro also helps to support detox pathways in the body.
Garlic is an excellent source of vitamin B6, manganese, selenium, and vitamin C. In addition, garlic is a good source of other minerals, including phosphorous, calcium, potassium, iron and copper.
Garlic has antifungal and antibacterial properties, can help lower inflammation, support detox pathways, and more.
Don’t forget that by using extra virgin olive oil as the base, you’re also getting loads of healthy fats.
The predominant fatty acid in olive oil is a monounsaturated fat called oleic acid, making up 73% of the total oil content. Studies suggest that oleic acid reduces inflammation and may even have beneficial effects on genes linked to cancer.
Olive oil is rich in antioxidants and is anti-inflammatory. It can be protective against heart disease, Alzheimer’s, Type 2 diabetes, and more.
By whipping up a batch of my GLOW Cilantro Lime Vinaigrette, you’re also increasing your nutritional intake when you add it to your meals!
Remember that dressing isn’t just for salads – you can use this vinaigrette as a marinade, over your favorite meat, poultry or fish, raw or roasted veggies, grains or legumes, on eggs and veggies for breakfast, or as a topper for your favorite GLOW Bowl combination.
- Zest of 1 Lime
- Juice of 2 Limes
- 1 Garlic Clove, grated
- 1 Tbsp chopped Cilantro
- 1/2 tsp Sea Salt
- 1/4 tsp Black Pepper
- 1/2 cup Extra Virgin Olive Oil
- In a mason jar, add the lime zest, juice, garlic, cilantro, sea salt, black pepper, and olive oil.
- Put the lid on the jar and shake until thoroughly combined.
- Serve over salad, grilled chicken, steak, fish, roasted or raw veggies, or as a sauce for your favorite GLOW Bowl combination!
